Armadillo Restaurant
started in the 1970's and is a family oriented
restaurant. The Lucio family are the ones who started it
all. In 1980 the Lucio family opened their first
satellite location in Fort Collins as well as a third
one in Longmont in 1983. They continued their growth
through the next 25 years and now manage seven popular
locations in the Front Range. All the food here at
Armadillo is made by an old family recipe.
Armadillo Restaurant even
has a Sunday Brunch which is an All you can eat brunch.
It starts at 10 AM and serves until 2 PM ever Sunday. It
includes a traditional Mexican breakfast with breakfast
rellenos, migas, breakfast chimichangas, breakfast
burritos, and more. They also have some regular
breakfast items such as waffles, eggs, bacon, and
omelets made to order.
Some of the Armadillo
traditions include Burrito Supreme, Enchilada Torte,
Chicken Torte, Mexican Hamburger, Amarito, Tamale
Dinner, Chile Relleno Dinner, and Tostada Grande. Some
of the sauces they have are Green Chile, Red Chile,
Mole, Del Mar, Healthy Dillo Red Chile, Ranchero, and
Hot Green Chile. Included on the Appetizers menu they
have Chile Con Queso, Fresh Guacamole, Taquitos, Regular
Nachos, Machaca Nachos, Combination Nachos, Hot Wings,
The Armadillo Combination, Huevos Rancheros, Breakfast
Burrito, and Armadillo Omelet. Their Salads and Soups
include Taco Salad, Fiesta Chicken Salad, Garden Salad,
Menudo, Tortilla Soup, and Chicken Soup. They have
Quesadillas and Sandwiches such as Giant Smoked Chicken
Quesadilla, Fajita Sandwich, and Traditional Hamburger.
You can also choose from a Combination of different
foods or Create-A-Combo. Also included on the Dessert
menu there is Fried Ice Cream, Flan, and Sopapilla
Basket & Honey.
