The owners
of Il Paistaio are Giuseppe Oreamuno and his wife Marta.
They first opened Il Paistaio about six years ago. The
restaurant is very small holding only 10 tiny tables.
Those 10 small tables fill up just about every night
while they also have "to go" orders being taken all
night.
Giuseppe
Oreamuno is half Coast Rican and half Italian but he
does a bit of Caribbean and Central American for the
lunch buffet occasionally. The dinner is all Italian and
includes nine different kinds of sauces such as Pomodoro
and Pesto with your choice of fresh pasta. This
restaurant brings the finest Italian cuisine in the
beautiful city of Boulder. They mostly specialize in
hand made pastas and sauces but have a different variety
of foods to choose from including Arrabiata and Zucca.
Giuseppe
and Marta tell the story of pasta so everyone knows how
the pasta is made and why their pasta is so great
tasting. The Romans are the ones that first made Gnocchi
and Laganum. Pasta was known as a "food containing
magical properties". Pasta became the national main
course in italy in the 17th century and continued
through the 18th and 19th century. Here at Il Pastaio
the pasta is processed through extrusion which is the
mix of fresh eggs, water & hard wheat flour, or semolina
that is combined to form a damp, crumbly, paste and made
into a die made of bronze. Extrusion breaks down the
gluten during the process and makes the pasta firmer,
tastier, and allows the cooks to make different shapes.
On the
dinner menu at Il Pastaio are a variety of foods. There
are appetizers which include Asparagus, Mushrooms,
Artichokes, Caponata, Cauliflower, and Spinach. There is
a Minestrone soup and a soupd of the day. They have an
Antipasti and salads for salad lovers. Included in
the entrees are Pollo alla Milanese with tricolor salad,
Linguini Mare Nero, Pollo Rumano, Pollo alla Parmigiana,
Eggplant Parmigiana, Roasted Pork Loin, Tilapia Mare
Chiaro, and more. There is also a House special menu
which includes Alfredo, Arrabbiata, Aurora, Basilico,
Bolognese, Meatballs, Pesto, and more. There is also
Gnocchi with tomato sauce, Gnocchi with Bolognese,
Ravioli with tomato sauce, Ravioli with cream sauce and
much more. Also cant forget the Lasagna which can be
served with beef, turkey, or vegetarian. Including with
desserts are Flan, Cannoli, Gelato, or Tiramisu. There
is also a Party Menu which includes large portions of
pasta cuisines.
